the filipino way to celebrate taco tuesday

My love for food has stemmed from many places - but at the heart of it, it's been thanks to my mom, Filipina and self-proclaimed foodie. And she loves browsing YouTube for different recipes and cooking "channels." She's sent me videos on cooking different French dishes, ideas for healthy alternatives, and of course modern twists on Filipino food.

Most recently, she started following Jen Phenomrat of the Just Eat Life food blog and YouTube channel, and sent me a bunch of her videos. My friends and I decided to do her Filipino lechon/pork belly tacos tonight, and they did not disappoint!

How did we like it? We LOVED it! Who doesn't love the savoriness of pork belly, glazed in soy sauce and crisped in the oven, or the fresh bite of pickled veggies?

Added suggestions from our experience:
  • Pickle the veggies in a big batch, and keep stored in your fridge for every occasion, including for when you make these tacos. Can go great in sandwiches, to top a salad, and more. That way you save time trying to make this every time you want tacos.
  • Pork belly: you can always boil on an afternoon or evening where you have time, then store in the fridge until you want tacos - then it only takes 20-25 minutes to glaze and bake in the oven, instead of 1.5 hours.
  • For a more Filipino experience, serve your pork belly tacos with Mang Tomas lechon sauce, which adds a slightly sweet, tangy note, instead of with sour cream.
  • Prep a passion fruit cocktail or slushee to pair with your tacos for a tropical, fun twist to round out your Filipino Taco Tuesday. :)
