family recipe: french crepes

One of my favorite memories from growing up was when I would visit my cousins in France. I have a cousin only a couple years older than me, so we were more like sisters and best friends than third cousins. And her dad, Gilbert (say it with a French accent: jhee-bear), was an AMAZING cook. Most mornings he would treat us with fresh crepes, rolled not folded, and with a thin layer of fig jam inside.



Over a decade later and I still love making his crepe recipe because it reminds me of the days I'd eat a whole plate without thinking once about my metabolism (LOL). While you can put whatever filling inside, I recommend trying the fig jam style at least once in your life!




Ingredients

  • 2 eggs
  • 3/4 cup milk
  • 1/2 cup water
  • 1 cup flour
  • 3 tbsp butter, melted
  • 2 tbsp liqueur (Armagnac, Cognac, Calvados)
  • 1/4 cup sugar
  • serve with your filling of choice (or just go with fig jam :) )
Directions

Butter a pan and heat on medium/low. Mix everything and ladle the batter into the pan, swirling the pan around to make a thin pancake (should be thinner than a normal pancake, you don't want these to be thick). Flip when the edges start to lift -- each side should have distinctive brown designs. 

You can fold or roll with your filling of choice.
